Ferratella (aka Pizzella or Neola) traditional abruzzese waffle cookies made from flour, eggs and sugar, and flavored usually with anise or anisette. The cookie dough is put into a Ferratelle iron, which resembles a small variant of the popular waffle iron. The Ferratelle iron is held by hand over a hot burner on the stovetop, although some models are electric and require no stove. The iron stamps a snowflake pattern onto both sides of the thin golden-brown cookie, which has a crisp texture once it is cooled. Ferratelle can be hard and crisp or soft and chewy depending on the ingredients and method of preparation. It can be moulded into various shapes as cannolo and filled with sclucchiata, the traditional Montepulciano d'Abruzzo grape jam, or chantilly.
