120 g of Butter
1 Egg and 1 Yolk
100 g of Sugar
100 g Dark Chocolate
Lemon zest
1 pinch of Cinnamon (powder) and 1 pinch of Salt
Nonpareil Sprinkles

Directions:

Grate lemon zest and put the butter in a little bowl.

For the dough: Put the Saragolla Semi Whole Wheat Flour onto a flat surface and make a well in it. Add sugar, butter, egg, yolk and other ingredients.

Mix all the ingredients together to form a dough, continuing to knead it's smooth. Cover the dough with cellophane and let stand at least for 30 minutes in the fridge.

Roll it out thinly. If the dough is too sticky, dust with a little bit of flour. Use the mask cookie cutter to form the Carnival pastry.

Cooks the biscuits in the oven (about 160°C / 320°F) for 15 minutes. As the biscuits are cooling, melt chocolate in a bain marie.

Guarnish the biscuits with dark chocolate and add the colored nonpareil sprinkles.
