Here's our special recipe to celebrate the International Woman's Day! We love all women (Rustichella's family is a matriarchal family), then we want to represent all Women by a special pasta dish, in terms of elegance, flavor and taste. Only a few simple ingredients, strong and deep flavors in the same time. For this recipe, we have choosen our Spaghettoni del Leone! Buon appetito and BEST WISHES!
Serves: 4
350 g of Spaghettoni del Leone by Rustichella d'Abruzzo
3 Eggs
300 g of Zucchini
100 g of sweet Pancetta
1/2 Onion
Extra Virgin Olive Oil by Rustichella d'Abruzzo
Black Pepper
Parsley
Preparazione:
Boil eggs in a pot for 8 minutes, then run them under cold water to cool off.
Removing the shell from eggs and crumble it with a fork.
Sauteé the onion in a pan (finely chopped) with Extra Virgin Olive Oil until to golden brown, then add zucchini cutted in pieces and cook it on low heat uniformly.
Add pancetta, zucchini and a lot of black pepper (to taste), and cook pancetta on medium heat just until it begins to crisp.
You need to have a large pot of boiling water, then cook the Spaghettoni al dente, drain the water and put Spaghettoni in a mixing bowl.
Add seasoning and "mimosa" eggs, then mix into the sauce (add a little bit of cooking water if necessary).
Put the pasta in a platter, garnish with a twig of mimosa flowers, leaves of parsley and black pepper to taste, then serve.
